RECIPE FOR PINEAPPLE CAKE

A different cake, excellent in appearance but also very tasty.
Pineapple cake
Ingredients
Dough:
* 195 gr. all purpose flour
* 2 tbsp. baking powder
* 1/4 tsp. salt
* 1 tbsp. vanilla
* 114 gr. unsalted butter (at room temperature)
* 200 gr. sugar
* 2 large or 3 medium eggs
* 120 ml. milk
* 1/4 tsp. cremour
Overlap:
* 4 tablespoons of unsalted butter
* 160 gr. brown sugar
* 1 medium pineapple thinly sliced
Instructions
1. Put the butter with the brown sugar on medium heat (in a saucepan) and leave until the butter melts and the mixture caramelizes slightly.
2. Take a mold that opens and after buttering it, spread the caramel to go everywhere. Arrange the pineapple slices to create a beautiful pattern.
3. In a bowl, mix the flour with the baking powder, salt and vanilla.
4. In the bowl of your mixer, put the butter and sugar and beat for 5 minutes. Add the egg yolks (one at a time) and continue beating for another 5 minutes. Add the flour mixture alternately with the milk.
5. In another bowl, beat the egg whites together with the cream until stiff and meringue. With a spatula, add the meringue little by little to the above dough and mix with gentle movements.
6. Spread the dough over the pineapple pieces and bake in a preheated oven at 180°C for 45-50 minutes.
7. Remove the mold from the oven and let it cool. Turn over and unmold.
